Scaling up without a watery batch

Making one smoothie is easy, and making twelve is where it goes wrong, because the thing people forget to scale is the blender. The ingredients scale by simple arithmetic, but the jar does not, and a recipe that triples on paper can still only be blended two servings at a time. Keep the ratio identical as you scale, split the batch to fit the jar, and a crowd of smoothies comes out exactly like the one you tested.

Scale the recipe, not the blender

Doubling a recipe does not double what your jar can hold. Frozen fruit needs room to move, so a big batch is often two or three blends rather than one heroic overfilled jug.

Liquid and frozen scale together

The ratio that made one serving right is the ratio that makes twelve right, so scale every ingredient by the same amount. Bumping the fruit but not the liquid is how a doubled recipe comes out unblendably thick.

Thickeners do not love a big batch
